Not All Elderberry Is the Same

Why American Elderberry Has a Different Antioxidant Profile

Walk through the supplement aisle or search for elderberry products online, and you will see the same word everywhere: elderberry.


It appears on syrups, gummies, drink mixes, capsules, teas, powders, granola, and snack foods. What the front of the package often does not tell you is that every elderberry is not the same.


American elderberry and European elderberry are closely related, but they are not chemically identical. Both contain the deep purple pigments known as anthocyanins. However, research has found an important difference in the types of anthocyanins each one contains.


American elderberry naturally produces a distinctive group called acylated anthocyanins. Pronounced (ASS-uh-lay-tid) These compounds help explain why American elderberry deserves to be recognized as more than a domestic substitute for the European berry.


It is a different berry with a different antioxidant profile.


Why Antioxidants Matter


Your body is constantly carrying out chemical reactions. It uses oxygen to produce energy, fight infections, repair tissue, and keep normal biological processes moving.

Those reactions can also produce unstable molecules commonly called free radicals. Free radicals are not automatically bad. They are part of normal human biology. Problems can develop when the body produces more reactive molecules than its natural defense systems can manage.

That imbalance is called oxidative stress.


Over time, oxidative stress can damage important cellular materials, including fats, proteins, and DNA. Antioxidants help maintain balance by interacting with reactive molecules and supporting the body’s own protective systems.

This is why colorful fruits and vegetables receive so much attention in nutrition research. Their color often comes from naturally occurring plant compounds that can interact with oxidation.


In elderberries, some of the most important of those compounds are anthocyanins.


The Purple Color Is Part of the Chemistry


Anthocyanins are plant pigments belonging to a larger family of compounds called polyphenols. They help produce the red, blue, and purple colors found in elderberries, blueberries, blackberries, cherries, purple carrots, and many other foods.

The dark color of an elderberry is not simply decoration. It is a visible clue to the plant chemistry inside the fruit.



Anthocyanins demonstrate antioxidant activity in laboratory testing, but scientists are learning that their role in the human body is more complicated than simply circulating through the bloodstream and neutralizing free radicals.


They are digested, transformed, and broken into metabolites. Researchers are studying how those compounds interact with cellular signaling, inflammatory balance, cardiovascular function, metabolism, and the gut microbiome.


This does not make anthocyanins a medicine or guarantee that an elderberry product will prevent disease. It does help explain why anthocyanin-rich foods continue to receive serious scientific attention.


American and European Elderberries Have Different Antioxidant Fingerprints


The two elderberries most commonly discussed are:

  • American elderberry, commonly identified as Sambucus canadensis

  • European elderberry, identified as Sambucus nigra

The berries look similar, but their anthocyanin profiles are noticeably different.

In a USDA-supported study, researchers compared eight American elderberry genotypes with two European cultivars over two growing seasons. Both species contained cyanidin-based anthocyanins, but the distribution of those pigments was distinctly different.


Every American elderberry sample contained more acylated than non-acylated anthocyanins. Acylated anthocyanins represented more than 60 percent of the pigments measured in the American berries. No acylated pigments were detected in the two European cultivars included in the study.

A later study examining five American elderberry cultivars found similar results. Approximately 63 to 72 percent of the anthocyanins in the ripe berries were acylated with p-coumaric acid.


That does not mean European elderberry contains no antioxidants. It does. The difference is in the structure and distribution of those antioxidant pigments.

European elderberry is primarily associated with non-acylated anthocyanins. American elderberry has an anthocyanin profile dominated by naturally acylated forms.


American Elderberry

  • Commonly identified as Sambucus canadensis

  • Native North American elderberry

  • Anthocyanin profile dominated by acylated forms

  • More than 60 percent acylated pigments in the USDA comparison

  • Greater pigment stability under certain conditions


European Elderberry

  • Identified as Sambucus nigra

  • European elderberry species

  • Rich in anthocyanins

  • Anthocyanin profile dominated by non-acylated forms

  • No acylated pigments detected in the two European cultivars included in the USDA comparison


What Does Acylated Mean?


The word sounds more complicated than the basic idea.

An acylated anthocyanin has an organic-acid group attached to part of the anthocyanin molecule. In American elderberry, that attached group primarily comes from p-coumaric acid.


That small structural difference changes how the pigment behaves.

Think of it as a naturally reinforced version of the molecule. The added structure can help protect the anthocyanin against some of the conditions that normally cause plant pigments to break down.


Researchers comparing elderberry pigments found that a major acylated anthocyanin from American elderberry was more stable under heat and light than a major non-acylated anthocyanin from European elderberry.


Other laboratory research found that acylating cyanidin-based anthocyanins with cinnamic acids increased their measured antioxidant activity.

This gives American elderberry two meaningful distinctions:

  1. Its major anthocyanins are structurally different.

  2. Those acylated pigments demonstrate greater stability under certain processing and storage conditions.



American elderberry is not simply the European berry grown on American soil. Its distinctive acylated anthocyanins give it a measurably different antioxidant profile.

Why Stability Matters Beyond the Fresh Berry

Very few people eat elderberries immediately after picking them. Elderberries are normally turned into another food or ingredient.

Each process exposes the fruit to different combinations of heat, light, oxygen, moisture, time, and storage conditions. Those factors can affect anthocyanins.

This is where the natural stability of American elderberry becomes especially relevant. Beginning with anthocyanins that are more resistant to degradation may provide an advantage when the berry is processed into a finished product.

It does not guarantee that every American elderberry product will contain the same antioxidant level. The cultivar, ripeness, amount of fruit used, processing method, formulation, packaging, and storage conditions all matter.

A poorly formulated product does not become superior simply because the words “American elderberry” appear on the package.



The starting berry matters, but what the manufacturer does with it matters too.

Does Greater Stability Mean Greater Health Benefits?


This is where responsible companies need to separate what research has established from what is still being investigated.


Acylated anthocyanins have demonstrated greater stability and, in some laboratory testing, greater antioxidant activity. That does not automatically prove they are absorbed more efficiently or produce stronger health effects in people.

In fact, a human study involving anthocyanins from purple-carrot juice found lower absorption of acylated anthocyanins than non-acylated forms. Greater stability may change how these compounds travel through digestion, how long they remain intact, and where they are metabolized, but scientists are still working to understand the complete picture.


The strongest scientifically supported conclusion is not that American elderberry has been proven to prevent more illnesses.

It is that American elderberry begins with a distinctive, naturally stable antioxidant profile that is not found in the same form in European elderberry.

That difference is real, measurable, and important.


How to Identify American Elderberry in Any Product

The next time you shop for an elderberry product, do not stop at the word “elderberry.” Look for three separate pieces of information.


1. Look for the species

The clearest identifiers are:

  • American elderberry

  • Sambucus canadensis

  • Sambucus nigra subsp. canadensis


Botanists sometimes classify American elderberry as a subspecies of Sambucus nigra. If you see the word canadensis, you are looking at the botanical identity associated with American elderberry.

Terms such as “elderberry” or “black elderberry” by themselves may not identify which species was used.


2. Look for where the berries were grown

Species and origin are not exactly the same thing.

A European elderberry plant can be grown in the United States. American elderberry could also be grown outside the country. If domestic agriculture matters to you, look for a clear statement that the product contains American-grown Sambucus canadensis.

Do not assume that “bottled in the USA,” “packaged in the USA,” or “manufactured in the USA” tells you where the elderberries were grown. Those statements may describe where the finished product was made rather than where its primary ingredient originated.


3. Look for how much elderberry you are getting

A berry on the front of the package does not tell you how much fruit is actually in each serving.

Look for companies willing to explain:

  • How much elderberry is included per serving

  • Whether the ingredient is juice, whole fruit, powder, concentrate, or extract

  • Which elderberry species they use

  • Where their berries are grown

  • How the berries are processed

  • Whether the company knows and controls its supply chain

No single product form is automatically best. A syrup, gummy, drink mix, granola, powder, or snack can all be useful ways to enjoy American elderberry.


Transparency is what allows you to compare them.


Three Questions to Ask Before Buying Elderberry

  1. Which species is it? Look for canadensis.

  2. Where was it grown? Look for American-grown, not simply bottled or packaged in the USA.

  3. How much is included? Choose companies that disclose the amount of elderberry in each serving.


What Transparency Looks Like

Look for the Species, the Source, and the Amount

American elderberry should not be treated as European elderberry with a different address.

It is a North American berry with a distinct anthocyanin fingerprint. Its naturally acylated pigments separate it chemically from the European species commonly found in elderberry products.

The next time you see elderberry syrup, gummies, drink mix, granola, powder, or snacks, ask three questions:


Which species is it?


Where were the berries grown?


How much elderberry is actually in each serving?

If you want American elderberry, look for the word that confirms the species: canadensis.
